What is PostScript and PDF? Where does it come from?

PostScript is a language and collection of font and file-format specifications developed by Adobe to describe how documents would be rendered on imaging devices, particularly laser printers. PDF is the Acrobat file format and thus is a more recent undertaking of Adobe that was substantially derived from the earlier PostScript work, but focused on creating small portable documents that could be both printed and viewed online. Neither PostScript or PDF readily allow documents to be modified, although there are PostScript subsets used by graphics packages (such as Illustrator) that can allow PostScript artwork to be modified.
