Filling: 1 lb fresh ground pork 1 10oz pkg frozen spinach 1 tbsp light soy sauce 1 tbsp sherry 1 tbsp sesame oil 1.25 tsp salt 3 tbdp minced green onions 3 tbsp minced fresh ginger 3 tbsp minced CHinese parsley (cilantro) Partially thaw spinach and lightly squeeze out liguid. (Leave some in) Mix with rest of ingredients. DOugh should make 48 round wrappers (roll them out). Fill each and pinch shut carefully. (apporx. 1 tbsp filling per wrapper.) Heat 2 tbsp oil in wok. Lightly brown pot stickers until golden on bottom. Pur one cup water in and cover immediately., Cook over medium heat until most of the liquid is absorbed. Uncover and continue cooking until all liquid is gone. These don't taste quite like Mary's version, but with experimentation you should be able to come quite close. Enjoy.
