Cheese & Pecan Spread - Nancy Eschrich (can be halved) 1 lb. sharp cheddar cheese grated 1 cup chopped pecans 1 cup chopped green onions (I used less) 1 cup mayonnaise (not low fat) Raspberry preserves - seedless Mix cheese, pecans, onions and mayonnaise together, flatten into a pie dish or smaller molds. I would like the mold with Saran wrap to make sure it removes easily! Chill, then turn out onto platter or bowl and spread with raspberry preserves. It looks great and tastes great. Serve with wheat crackers. It can be halved easily and made the night before and top with the preserves just before serving.
