mkserv -nfs and reboot.

Oh, you don't want to do that right now? :-)

You should be able to just kill off mountd, possibly the nfsd
processes also (if you're concerned about nfs access at that level),
and rm /etc/exports.

A non-empty /etc/exports is what determines if mountd is started at
boot time.
