Blueberry Brunch Cake 1 cup flour 1/3 cup sugar 2 tsp. baking powder 1/2 tsp. salt 1 egg 1/2 cup milk 1/3 cup veg. oil 1 Tbs. lemon juice 1 cup blueberries 1/3 cup sugar 1/4 cup flour 1/4 cup cinnaomon 1/2 cup chopped pecans 2 Tbs. butter, softened Combine first 4 ingredients in a medium bowl, and set aside. Combine egg, milk, oil, and LJ; add to dry ingredients mixing well. Pour batter into greased 8-inch square baking pan; sprinkle with blueberries. Combine remaining ingredients; sprinkle over blueberries. Bake 350 deg. for 40 min. 9 servings.
