Indonesian Marinaded Cucumbers: ------------------------------ Ingredients: ----------- 4 cucumbers 1 small onion 1 tsp sambal oelek 1 clove garlic 1 tsp ground ginger ~1 tsp turmeric ~1 cup white vinegar ~1/2 cup water lots of sugar salt cooking oil Directions: ---------- Peel the cucumbers and slice them in half lengthwise. Use a spoon to scoop out the seeds, and then slice into long strips (maybe 1/6 diameter and 1/2 length each). Sprinkle the strips with salt and allow to sit for an hour or more. In a large skillet, cook the onion in large chunks in some oil with the spices. Add the sambal and liquids and bring to a boil slowly. As you do so, add sugar (lots, just pour it in) until you reach the desired taste (As Mom said "should be sweet-sour, not cloyingly sweet, nor a kick in the head, and not too weak"). Add more water if the vinegar is too strong, but keep in mind that the flavor in the cucumbers will be weaker than the marinade. Dry the cucumber bits with a paper towel (actually, it'll take many) and add them to the mixture. Cook for a few minutes, until they are not raw but still crunchy (crisp-tender :). Err on the crunchy side, since they'll cook a bit more in the hot marinade after they're taken off the heat. Put the entire mix in a jar or covered bowl in the fridge for at least a few hours. {Disclaimer: These directions are written from memory, based on a dish I made by combining two recipes and feeling my way as I went.
