Stir-fry sauce (Jess): 1 tbsp corn starch Soy sauce, dry white sherry 1/1 ratio Ginger Garlic Marinade chicken while chopping veggies, 10-20 minutes Alleged Mary's Suan recipe -------------------------- For each serving, you'll need approximately: 2 Tbsp soy sauce 1 tsp vinegar (wine vinegar is best) 1 tsp chili oil* (more if you want it hotter, less if you don't) 1/8 - 1/4 tsp chopped garlic (about 1/2 clove) 1/8 - 1/4 tsp sugar water 6-7 wontons (see wonton recipe) 1 handful bean sprouts 1. Mix together soy sauce, vinegar, chili oil, chopped garlic, sugar. Let sit to let the garlic flavor the sauce. 2. Boil two small pots of water. 3. Dunk bean sprouts in one pot of boiling water. Remove from heat, and let sit about 5 minutes. Drain. Put beans sprouts in bowl. 4. Put wontons in the other pot of boiling water. Bring to boil again. Add a dash of cold water. Bring to boil again. Drain. Wontons are cooked when skin is kind of translucent but not mushy. 5. Arrange wontons on top of bean sprouts. Pour sauce over it. Serve. * Chili oil (la yu) can be based in peanut oil or sesame oil. Peanut oil is more common, thus easier to find. But sesame oil has more flavour. Use the sesame oil based one if you can get it, but if not it's no tragedy. Note: For more servings, just multiply by the number of servings. And use a bigger pot. The measurements does not have to be exact, vary it to your taste. Wontons Standard recipe for making your basic wonton. This makes about 30. 1/2 lb ground Pork 1 Tbsp soy sauce 1 tsp sugar 1/2 tsp garlic powder 1 small egg 1/2 lb wonton skin/wrappers 1. Mix together ground pork, soy sauce, sugar, garlic powder, and egg. 2. Stir fry for about 3-5 minutes, until half cooked. Drain grease, set aside. 3. Wrap in wonton skin (see "How To Wrap Wontons"). Note: From here you can use the wontons for Suan La Chow Show, or wonton soup, or fried wontons, or noodle soup with wontons, or spaghetti with wontons (well....maybe not), or whatever.
